A side that accompanies a wide range of mains from steak to chicken to salmon, Roasted Asparagus is such an easy and elegant way add a little flavour to your meal. Renowned for picking up a slightly nutty flavour after roasting, asparagus is as tasty as it is versatile.
When choosing the best asparagus be sure that tips are tightly furled and perky, rather than limp. The shoots should also be straight and firm.
- 500g asparagus
- 1 1/2 tbsp olive oil
- 1 tsp sea salt
1. Preheat oven to 200°C.
2. Cut off the woody bottom part of the asparagus spears and discard.
3. Place asparagus on a baking sheet and then drizzle with olive oil and sprinkle with salt. Roll the asparagus around until they are evenly coated.
4. Roast for 10-15 minutes, depending on the thickness of your stalks and how tender you like them.
5. Remove from oven and serve with lime wedges or a light vinaigrette.
